Well, this is a full circle moment.
Mission Sandwich Social in Williamsburg (aka home of stacked sandwiches and the kind of bread you dream about) hit me up recently with a very fun request:
"Can we make a sandwich together?"
Chef Brian Tsao asked me to fill out a lil’ flavor questionnaire - kind of like a dating profile, but for your taste buds. I listed my favorites (crispy bacon, chicken cutlet, garlicky anything) and hard no's (looking at you, cilantro), and he got to work.
The result? The Skinny Pig! A deliciously unhinged ode to my food blog (which actually started out as a “bacon blog”), and longtime moniker before I changed my IG handle to just @darapollak. Nostalgia and bacon? Say less. Watch the video here:
And here’s what’s in this absolute beast of a sandwich:
Crispy chicken cutlet
Swiss & provolone (because one cheese is never enough)
Bacon (a lot of it)
Creamed spinach (truly underrated on a sandwich — I said what I said)
A touch of mustard
All housed on their signature garlic Dutch crunch bread
It’s me in sandwich form. Aggressive. Salty. A little messy.
And it tastes so damn good. I taste tested it myself a few weeks ago before my Coronectomy surgery and gave it the official seal of approval. Almost had to unhinge my jaw for it.
I highly recommend you share it with someone…but you don’t have to. Live your truth.
